Sweet ‘n’ sour sauce with cucumbers or courgettes
On it’s own as a savoury treat or light meal, or to accompany rice or potato dishes.

Ingredients
2 kg cucumbers or courgettes
3 large onions
2 red peppers
Ingredients for the sweet ‘n’ sour sauce
500 ml table vinegar
500 ml water
2 tsp. turmeric
2 tsp. mustard seeds
1 tsp. nutmeg
350 g sugar

Preparation
Start by slicing the vegetables (cucumbers, courgette, onions, peppers) finely and sprinkling with 2 tbsp. salt. Leave to stand for 30 minutes and rinse with water.
Bring the ingredients for the sweet ‘n’ sour sauce to the boil, add the vegetables and simmer for a few more minutes. Then pour into jars when hot, close the lids and turn upside down for 10 minutes! to
